I’ve ✈️ ~10k miles in the last month and and guess what I have to show for it…. the #flu!!

I’m finally back in my own kitchen so I did some research and came up with an #immunityboosting, #power punching, #soup to get me back up and running! #Carrot, #ginger, #turmeric and #coconutmilk soup to the rescue!

Ingredients:
  • 2 tablespoons olive oil
  • 1 medium leek sliced
  • 1 small sweet potato, diced
  • 3 medium carrots, peeled and sliced
  • 4 cloves garlic, pressed
  • 1 quart vegetable broth
  • 1 (14 ounce) can of full fat coconut milk
  • 1 cup water
  • 1 1in piece of ginger peeled and grated
  • 3 1in pieces of fresh turmeric peeled and grated
  • Juice of one lime
  • 1 tbsp of Thai red curry powder
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • (Optional) 1 tablespoon maple syrup (or honey) or to taste if bitter
  • Garnish: pumpkin seeds, goat cheese
Instructions:
  1. Heat 2 tablespoons of olive oil in a 6 quart or larger Dutch oven over medium-high heat. Add the leek, sweet potato, and carrots. Saute for 4 minutes
  2. Add the garlic, turmeric, ginger and vegetable broth. Cover and simmer until vegetables have softened – around 15 mins
  3. Use an immersion blender* to puree the soup
  4. Add the coconut milk, curry, salt & pepper. Taste and adjust seasonings as needed. If too bitter, add a tbsp of maple syrup or honey.
  5. Serve topped with pumpkin seeds & goat cheese
  6. Enjoy!
